What’s up fam,
This baked oatmeal is simple, filling, and mom life approved. I love to make it to help my mornings be a little more seamless. It’s a good staple to have in the weekly rotations of breakfasts. No extra fluff, just real good food.
However your morning looks, this is the one to add in to the mix! It’s a balanced breakfast choice too. It has a good amount of protein, fiber, and it’s lower in sugar!
Ingredients:
- 3 cups rolled oats (I like one degree brand)
- 1 scoop collagen powder (I use perfect supplements!) @emawinters for 10% off
- 2 tbsp chia seeds
- 2 tsp baking powder
- 1/4 cup maple syrup
- 1 cup milk (dairy or non dairy)
- 1 cup Greek yogurt
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp salt
Directions:
- Heat oven to 350°F
- Mix oats, collagen, chia seeds, baking powder, and salt
- In another bowl, whisk milk, yogurt, eggs, maple syrup, and vanilla
- Pour wet mix into dry and stir well
- Grease a baking dish (or use parchment paper for less clean up😉) and pour the mix in
- Bake for roughly 40 minutes until oatmeal is set!
- Let cool before slicing
Finishing Up
You can store leftovers in the fridge. Lil pro tip – it tastes better a little warm. You can even add fruit or a drizzle of nut butter if you’re feeling fancy. Or not. Either way, it’s good. A little more balanced of a meal that shouldn’t send your blood sugar levels spiking lol. big score! Try it out and let me know whatcha think 🙂
