I finally found the solution to “what do I do with all these beef steaks?”
If you’ve recently bought a cow or harvested your own. You probably have a few chuck steaks deep in the freezer. Or a dozen if youre like me and use all the ground beef first. Either way, I got you covered with this recipe!
We’re talking melt-in-your-mouth chuck steak. It’s cooked in an Instant Pot and flavored with coconut aminos. No fancy ingredients. No hours spent in the kitchen. Music to my ears in this season!
Pair it with:
- Mashed potatoes and roasted veggies
- Rice and green beans
Ingredients:

6 people use 3lbs, 8 people use 4lbs
- 2 lbs chuck steak (or chuck roast)
- 2 tbsp olive oil (or whatever oil you have)
- 1 cup beef broth (or just water if you’re out)
- ½ cup coconut aminos (or low sodium soy sauce)
- 2 tbsp apple cider vinegar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
- 1 medium onion, sliced
- ½ tsp salt
- ¼ tsp black pepper
Steps:
- Heat: Turn your Instant Pot to Sauté mode. Add the oil and let it get warm
- Sear the beef: Pat your chuck steak dry. Salt and pepper both sides. Sear in the pot for 2 to 3 minutes per side until browned. Don’t cram it all in. It’s best to work in batches if needed. Set beef aside when done.
- Sauté: Toss in the onion, garlic, and ginger. Cook for about 1–2 minutes until your kitchen smells like you’re doing something impressive.
- Deglaze: Pour in a splash of broth (or water) and scrape up the brown bits from the bottom. That’s flavor right there so don’t skip this part or throw out the browned bits!
- Mix: Add the rest of the broth, coconut aminos, apple cider vinegar, and more salt and pepper. Give it a good stir.
- Add beef back in: Cut your seared beef into 2-inch chunks. Drop them back in the pot and make sure they’re all in the liquid.
- PressureCook: Lock the lid. Set to High Pressure for 45 minutes. Then let it naturally release for 10 minutes before finishing with a quick release.
- Donezo: That’s it! Spoon out your tender beef and serve it up however you like.

This meal’s a no-brainer if you’ve got beef that needs to rbe used or you want something tasty with no stress!
Leftovers? (You probably won’t have any), but if you do toss them in a rice bowl, or eat straight from the fridge! No wrong way to go here.😂
